I guess it's all about whether you wish to engage your early career in the front office or back office, with such an aspiration you can easily choose from the offers. Remember, mostly, internships are used to pave a way for you to get an entrance to your ideal gradjob roles!

To reject offers, it is inevitable that you would somehow upset the HRs, as they proceed you with quite some procedures which involve quite some work done behind. What you can do is just to write an email politely saying that you are not going ahead with the offer and even call them for that. Be polite, say sorry and should be alright.
